One Pan Healthy(er) Sriracha Chiken Fried Rice

I absolutely love fried rice, but I know its usually packed with SODIUM. I love to make my own fried rice from scratch and I feel much better about what is in it (and it is not as hard as it might seem).

Start by cooking your rice. I use instant brown rice. I cook it according to the box directions (doesn’t take more than 10 minutes). I typically cook 4 serving of rice at a time. Once done, set this aside until the end.

I start by cooking my chicken breast. I drizzle the pan with olive oil and add the chicken to Med-High heat on both sides, for one minute each. While the first size is searing, I add some garlic and onion powder, salt and pepper, and Italian seasoning. Then I put the lid on the pan, lower the temperature to Med and let the chicken cook for 8 minutes, flipping half way through.

Once the chicken is done, I place it on a cutting board to rest while I prepare the rest of the dish.

Next, sauté half of an onion and a few cloves of garlic for about 2-3 minutes.

Then add 1/4 cup peas and carrots (I use frozen) and continue to cook for 3-4 minutes.

Move the cooked veggies over to one side of the pan and crack 4 eggs in to the same pan. Scramble the eggs until they are done an then mix the cooked egg and veggies together in the pan. (Sorry I forgot to picture this part)!!

Then pour in the cooked rice and mix everything in the pan together. Add 1/4 cup soy sauce (sometimes I do even less), a pinch of sesame seeds (optional), and 1 tsp ginger (I use bottled seasoning, but you could use fresh).

Lastly, (although this is optional, I think this is what makes the dish awesome) squirt some layers of Sriracha sauce on top and then stir to mix it! This gives this particular fried rice dish some extra flavor and a little big of heat.

Ps: my husband does NOT like hot stuff, but he loves this dish, so don’t be afraid to add a little Sriracha for flavoring. I would start small and then add more if desired.

Lastly, cut up the chicken that you set aside earlier and mix it in if desired. You can just serve the rice as a side dish to the chicken!  YUM and ENJOY!
