Everyday Meal Prep Recipes
My meal preps usually consist of a protein, a carb, and a veggie… usually translates as chicken + rice or pasta + steamed broccoli. However, I am looking for new ways to switch it up, and this low sodium chicken lo mein recipe turned out delicious! I actually looked forward to eating the same thing for lunch every day!
Low Sodium Chicken Lo Mein & Veggies
Ingredients:
- chopped peppers (what ever colors you like) – I used yellow and red
- chopped onion
- 2 chicken breasts
- 1/2 box of spaghetti or linguine pasta – I used linguine
- 3 TBS olive oil
- 1 TBS sesame oil
- 1-3 TBS sriracha sauce – depends how spicy you want the dish to be
- 1 TBS balsamic vinegar
- bag steamable veggies – I used broccoli
Instructions
- sautée peppers and onions, then set aside
- cook chicken breasts, cut into bite size pieces, then set aside
- boil/cook noodles, then drain
- cook bagged veggies – I buy microwavable steamer bags
- toss noodles in a bowl with olive oil, sesame oil, balsamic vinegar and sriracha sauce
- if seems dry, add more sesame oil
- distribute noodles into 5 containers (or however many you need)
- distribute chicken on top of noodles
- distribute veggies
- enjoy
